Triple A: artichoke, avocado, arugula salad

Perfect salad for brunch! Or lunch! Or dinner! Any leafy greens will work. Add 1-2 hard-boiled egg, ½ avocado, ½ cup of marinated artichoke, few olives, cherry tomatoes, and any other vegies of your choice (onion, cucumber, pepper). Dress up with olive oil and balsamic vinegar, salt and pepper. Sprinkle with toasted sesame seeds. ZESTY NOTE: artichoke is low in calories and high in dietary fiber. Cynarin, found in artichokes, is a powerful agent reducing not just cholesterol synthesized by the body, but helps to get rid of cholesterol that comes from the diet. Avocado is a great source of Monounsaturated Fatty Acids “Good fats”, which improve brain function and memory. Chlorophyll in leafy greens helps the liver to detoxify. Eggs (yokes) are good source of choline, an essential nutrient necessary for the production of acetylcholine – the neurotransmitter that facilitates communication between our muscles and nervous system.
